Meat Plant Design Manual’s
These guidance manuals have been prepared by MLCSL Consulting on behalf of the Food Standards Agency to assist those involved in the construction or modification of meat plants intended to comply with the standards required for premises operating to the following EC Regulations:
- 852/2004 (H1) on the hygiene of foodstuffs.
- 853/2004 (H2) laying down specific rules for food of animal origin.
The advice follows the requirements of the regulations but also includes MLCSL Consulting views of “best practice” which often exceeds the regulatory requirements but has been found to be useful in practice.
The full set of manuals has three volumes concerned with different types of meat plant. Each of these can be purchased separately.
The first volume is concerned with Slaughterhouses. This second volume covers Cutting operations, and the third volume, Processing.
This guidance manual is an update of that originally prepared by what was the Meat and Livestock Commission (MLC) Industry Consulting.
